Vanilla Pudding Sauce

I've always been one of those people that prefers to play it safe, especially when it comes to food and being hungry! I actually don't think I've ever put anything but maple syrup on pancakes in my entire life!! But I came across this recipe and was intrigued by the fact that it has nearly 1/3 less sugar than maple syrup, so I thought I would give it a go....and have Ryan take the first bite just incase ;)


Well...let me tell you...I don't know if I will ever use maple syrup again....YES! It's that good!! So warm and creamy with the perfect amount of sweetness...between the light and fluffy pancakes, mixed with the thick vanilla pudding sauce toped with fresh strawberries {all three components are NECESSARY}....I mean what else do you want? Seriously! Can I really call this breakfast?


Vanilla Pudding Sauce

With your favorite Pancake Recipe:
2 Cups Organic Fat Free Milk (or regular milk if you prefer)
1 Organic Egg
2 Tbsp Organic Cornstarch
1Tbsp Organic Butter Spread
2 tsp Organic Vanilla
1/3 Cup Organic Sugar
1/8 tsp Salt
Organic Strawberries {Topping}


Combine sugar, cornstarch and salt into a saucepan. Whisk together the milk and egg then gradually stir into saucepan. Cook over medium heat, stirring constantly until mixture comes to a boil. {Make sure not to turn up the heat too fast or you will scramble the egg} Boil for at least 1 minute, stirring constantly. Remove from heat and add butter and vanilla...serve warm!
Note - Use whatever you have leftover as a fruit dip!

  1. I can attest to how yummie this is! susanah made it for her dad and me aand I almost licked my plate clean. And for the first time in my life I didn't feel guilty about having pancakes for breakfast! Happy mother's day to all!
