Watermelon Lemonade

I don't know about you, but the 4th of July has to be one of the most relaxing and enjoyable holidays of the year.  We always head up to my parents lake house in northern Indiana for the week.  Now, when I say 'Lake House', don't get any wild, elaborate ideas in your head.  It's more like a cabin; no TV, a stove you have to light with a match, and a boat where you're always crossing your fingers that it starts, kinda place.  But it's 'The Lake', an escape from life, technology, deadlines and all the hustle and bustle that consumes our lives nowadays.  However, there is one thing that at the lake that is a sure bet....WATERMELON! 
I stole this recipe from my cousin, Jill, who was hosting a baby shower for my other cousin... she literally handed me a glass of this when I walked in the door and since then I have been hooked!!!  It's soooooo refreshing, light, crisp, healthy (free of HFCS and other additives you find in various lemonade beverages), low in calories and just all around yummy, not to mention absolutely PERFECT for your 4th of July get-together or B-B-Q!
Watermelon Lemonade (Organic)
Slightly Adapted from: All Recipes
What you need:
1 Whole seedless Watermelon (4 Cups Cubed)
1/2 Cup Fresh Organic Lemon Juice (About 2-3 Lemons)
1/2 Cup Organic Sugar
6 Cups Ice Cubes
3 Cups Cold Water
1/2 Cup Water for boiling


Directions:
1. Place the 4 Cups of Watermelon into a blender and puree until smooth.  Strain through a fine, mesh strainer, sieve or cheese cloth.  
2. In saucepan bring 1/2 Cup Water and Sugar to a boil over medium-high heat until the sugar dissolves (About 5 mins)
3. Remove from heat.  In a large, glass pitcher combine warm sugar water, lemon juice, 3 Cups cold water, watermelon puree and ice cubes altogether. Gently stir before serving.
